The origin of the small molecule MGO from Manuka honey is controversial because MGO is highly reactive towards the amino acids Lysine, Arginine, and Cysteine. The reactions generate compounds that have a range of different properties. MGO can lead to protein modification, and it has been associated with diabetes. The MGO cross linking can generate AGEs (advanced glycation end products). The AGEs can be pro-inflammatory and activate macrophage (white blood cells) through RAGE (receptor for advanced glycation end-products). So, MGO is pro-inflammatory in certain circumstances depending on the structures generated during the cross linking of the amino acids in the proteins.
